Get up and moving with these nutrient rich, 6 ingredient energy bars. All you need to do is put everything into a food processor and blend away!

Ingredients
2cupsrolled oats
2cupssoft datespitted
1/4cuproasted coffee beansground or full
1/2cupshredded coconut
1tbspvanilla
1/4tspsalt
Instructions
Place everything into a food processor and blend together until a dough forms (about a minute or so). If the dough is a bit dry, add 1 tbsp of water until it comes together.
Line an 8x8 inch square pan with parchment paper and using damp hands, press the dough flat into the pan. Refrigerate for 1 hour or until firm.
Once firm, cut the square into 16 bars. Store in the fridge and enjoy!
Notes
If crunching on coffee beans isn't your jam, you can use ground coffee instead, or even process the coffee beans to a finer grain before adding in the rest of the ingredients.
