Get Your A** Up Energy Bars

Get up and moving with these nutrient rich, 6 ingredient energy bars. All you need to do is put everything into a food processor and blend away!

Ingredients

  • 2 cups rolled oats
  • 2 cups soft dates pitted
  • 1/4 cup roasted coffee beans ground or full
  • 1/2 cup shredded coconut
  • 1 tbsp vanilla
  • 1/4 tsp salt

Instructions

  • Place everything into a food processor and blend together until a dough forms (about a minute or so). If the dough is a bit dry, add 1 tbsp of water until it comes together.
  • Line an 8x8 inch square pan with parchment paper and using damp hands, press the dough flat into the pan. Refrigerate for 1 hour or until firm.
  • Once firm, cut the square into 16 bars. Store in the fridge and enjoy!

Notes

  • If crunching on coffee beans isn't your jam, you can use ground coffee instead, or even process the coffee beans to a finer grain before adding in the rest of the ingredients.
  • Will keep in the fridge for about a week
