Fudgy Brownies

Everybody needs a good brownie recipe. Instead of eating those dry two-bite brownies (which I agree can have their good moments), I grew up eating fudgy bakery style brownies that my mom would bake. This is that recipe.

Let me tell you that these brownies are everything. They have something for everyone. Sweet but not too sweet and also a little crunchy if you decide to add in walnuts. The recipe also doubles nicely if you wish to make one batch with nuts and another without. You can also throw in other toppings if you want like marshmallows and chocolate chips.

These fudgy brownies are also super easy to make with minimal mess. For starters, you only need one bowl for this recipe. Another bonus is instead of melting in actual chocolate this recipe uses cocoa powder. I like to whip these up before a potluck since they’re so quick and almost mess free.

The key to this brownie recipe is you need to bake them until they’re cooked but still hold their fudgy consistency. I find 28-30 minutes to be the sweet spot but you know when they’re done when a toothpick inserted into the middle comes out with no wet batter on it but still has a little fudge sticking on (see my Tik Tok for a visual on this).

You can also serve these brownies as a classy dessert next to a scoop of ice cream and topped with fresh fruits. Or you can set them up on a platter dusted with icing sugar or cocoa powder. Either way these brownies are so universal and I definitely recommend keeping this recipe in your back pocket for when you need it!

Fudgy Brownies

Fudgy and decadent with a thin crust on top, these brownies are perfect for everyone as they're not too sweet, hassle free and can be made with or without nuts/toppings.

Ingredients

  • 3/4 cup cocoa powder
  • 1 ⅓ cup sugar
  • 1/4 tsp salt
  • ½ tsp vanilla extract
  • 5 oz. melted unsalted butter (or 10 tbsp)
  • 2 cold large eggs
  • 1/3 cup all purpose flour
  • 1 cup crushed walnuts or pecans optional

Instructions

  • Heat the oven to 325°F. Line an 8×8 inch square pan with tin foil and set aside.
  • In a medium bowl whisk together the cocoa powder, sugar and salt. Stir in the melted butter and vanilla.
  • Add the eggs, one at a time. Stir until the batter lightens in colour for about 1-2 minutes.
  • Add in the flour and mix until just combined. Fold in the nuts if you're choosing to include them.
  • Bake in the preheated oven for about 28-30 minutes or until a toothpick inserted in the middle comes out with a little bit of fudge clinging to it. Cool the brownies on a wire rack for about 45 minutes to one hour then gently lift the tinfoil out of the pan to remove them. Cut into squares (it helps to wipe the knife after each cut) and enjoy!
