3 Easy Fall Recipes to Try This Season

One of my favourite parts about fall is all the yummy baking. There’s something so cozy about baking with pumpkin and spices that makes my heart so happy. I tried out multiple fall recipes this year so that I could share with you some fall recipe inspo that has been tried and approved by me!

Pumpkin Cream Cheese Muffins

This recipe from Sally’s Bake Blog makes some incredibly soft pumpkin muffins. I would honestly make this recipe just for the muffins and leave out the entire cream cheese filling. However, if you do opt for the cream cheese filling, make sure you heap in a generous tablespoon of it when assembling the muffin otherwise it may get lost in all the pumpkin batter.

This is the perfect recipe for someone looking for something not too sweet but still satisfying. I used parchment paper in lieu of cupcake tins to get more of a rustic fall aesthetic. I also made sure to fill my muffin tins up to the top with batter to yield big round tops on my muffins.

Pro tip: if you want something a little sweeter, whip up a batch of your favourite cream cheese frosting, omit the butter/brown sugar coat on top and pipe frosting over the cooled muffins instead!

Soft Pumpkin Cookies with Salted Maple Icing

Broma Bakery has come out with quite a few stunning fall recipes. This year I opted to try their soft pumpkin cookies with salted maple icing and let me tell you, they are DANGEROUS (as in I couldn’t stop eating them).

One thing I will say is I found the icing to be a little on the watery side, so you may need to either do a few layers of icing (which is what I did) or make the icing thicker by adding in more icing sugar or omitting some of the liquid.

Pumpkin Scones with Spiced Pumpkin Glaze

Scones are already a solid year-round staple, however these pumpkin scones from Once Upon a Chef will totally blow you away. They’re moist, packed with spices and make your house smell AMAZING when baking. My favourite part is the icing, since the sweetness of it pairs so well with the less-sweet pumpkin scone.

These were also super easy to make. By easy, I mean I made them at 9pm on a Monday while sipping a glass of red wine and was still in bed on time (subtle brag moment). Not going to lie, I ate three of these for breakfast the next morning. I also doubled the recipe and froze half of the baked, un-frosted scones for Thanksgiving weekend.

Pro tip: I substituted the vanilla extract in the icing for maple extract and it completely elevated the results (IMO)!

Tips for Fall Baking

Spice It Up

When choosing a recipe, look for comforting and “warm” flavours like cinnamon, ginger, nutmeg and cloves. It’s getting chilly outside and these flavours make a dreary fall day super cozy!

Maple Extract

Try subbing vanilla extract for maple extract when you can. I got mine at a generic grocery store in the baking aisle for like two dollars. In my opinion, maple pairs really well with pumpkin!

Choose Rustic

When assembling my fall baking, I prefer to opt for a more rustic look. I like to serve cakes on silver platters, opt to frost with a butter knife instead of a piping bag, and like to press my pie crusts down with a fork instead of crimping it! Maybe that’s just me being lazy, but the rustic farmhouse look suites fall baking quite nicely.
